Breakfast:
bad girl...did not eat breakfast, but did have 1 cup of regular coffee and 1/2 cup of bulletproof coffee.
Lunch:
Leftover grilled chicken on top of 2 baked new potatoes w/ leftover veggies from last night on top.
Absolutely delicious
Snack:
favorite smoothie
2 clementines, 2 frozen bananas, 1/2 c. almond milk, 1 T almond butter
Dinner:
Sweet 'n sour meatballs
1 # grass fed beef, 1 egg, 2 T minced garlic, salt and pepper rolled into balls and cooked in hot iron skillet.
Remove from skillet and saute one onion 1/2 green bell pepper and 1/2 red bell pepper. Pour off juice from 1 large can pineapple chunks. Add pineapple to saute and also added some frozen cranberries.
Mix reserved pineapple juice w/ beef broth to make about 2 cups. Pour onto saute veggies and bring to boil. Reduce to simmer, then use 1 T arrowroot powder dissolved in 2 T water to thicken sauce. Add the meatballs back into the mixture to cook a bit longer.
Wm got his over rice. I just ate mine as is. I really liked this! We have some leftover...So glad that Wm really doesn't like leftovers.
Dessert:
1/2 cup applesauce w/ cinnamon
