Peach Enchiladas

We are the lucky ones here in Austin. Peach stands from Fredericksburg. Yummy. 5 bucks a basket. So worth every cent.
I made this 'peach enchilada' recipe with apples...(long story) for the 4th. It was so good, even with apples. So, I'm making them tomorrow night for our small group.

2 cans of crescent rolls
4 peaches, peeled and quartered
1 cup of butter
1 cup of sugar
1 t. cinnamon
1 12 oz can of sprite or mountain dew ( I used Sprite)

Preheat oven to 350 F.

Melt butter and add sugar and cinnamon. Set aside.

Unroll crescent roll dough and seperate on the perforations. Place a peach quarter in each triangle. Roll from large end to small. (If desired, after rolling, encase peach with dough by gently stretching and pinching dough together.)

Place rolled dough in a 12x10x2-inch baking pan. Pour or spoon butter mixture over all. Pour Mountain Dew (or Sprite) on top. Bake, uncovered, for 45 minutes. Serve as is or with ice cream. (This recipe can be easily halved.)

  1. Oh I miss my trips to Fredricksburg...oh my, these sound great....peaches!!! I did apples in the fall with red hots in the middle.
